XANTHAN GUM 25kg
Description
Thickener obtained from the fermentation of corn.
It does not affect either the pH or the amount of salt in the product.
With ice cream, it delays crystallization.
It can be worked both cold and hot. Provides good freeze-thaw stability.
Used for its good suspension characteristics.
Origin:
Vegetable, corn.
Properties:
200 Mesh.
Stabiliser.
Thickener.
Mode of use:
To dissolve, add slowly while mixing in hot or cold medium.
Mix with hand blender.
Technical note:
Great for making egg-free mayonnaise.
Helps to delay crystallisation when making ice-creams.
Allows alcohol thickening.
Allows freezing.
Recommended dosage: 0,8 g to 8 g per L.
Application: 2 g/L - 6 g/L - 8 g/L.
