AGAR AGAR 130g
Description
Thermo-reversible gelling agent that comes from red algae, cold and hot gelling applications, clean cut.
It is not necessary to add any substance to form the gel.
Suitable for vegan and vegetarian regimes.
Origin:
Vegetable, red seaweeds French Brittany.
Properties:
Gelling starts from 43ºC.
Boil to activate.
Due to the quality of its fiber, we can work with alcohol.
Mode of use:
Three necessary steps: dispersions, hydration, solution.
Disperse in water, stirring and heat to boil (100ºC), until its complete dispersion.
When it cools down, it gelifies.
Agar agar gelatin maintains its texture at room temperature.
Technical note:
Thermo-reversible.
Resistant up to 70ºC.
Does not allow freezing.
The higher the quantity, the firmer the texture.
Hard gellification, firm-cut.
Good compatibility with sugar.
Recommended dosage: 1,6 g to 14 g per L.
-Very soft texture 1,6 g / L.
-Soft texture 3 g / L.
-Hard texture 10 g / L.
-Very hard texture 14 g / L.
